PB&J greek yogurt parfaits

This is the second day of school with my kiddos and the hectic bustle of the school year has officially hit me. This isn’t a bad thing, but it’s exhausting – So I’m keeping this brief and cutting to the chase.

Who doesn’t love a peanut butter & jelly sandwich?! This epic dessert takes the delicious nostalgia of a PB&J and turns it into a sweet, creamy, & crunchy treat. The best part is that it contains 18g of protein and is only 280 calories per serving (this recipe makes 2) – so it will keep you feeling full without destroying your diet. And it’s totally giving me a much-needed energy boost right now. #winning

PB&J GREEK YOGURT PARFAITS

WHAT YOU NEED:

1 cup of plain nonfat greek yogurt

2/4 tsp. of stevia sweetener

2 Tbsp. of powdered peanut butter (PB2, PB Fit, or whatever brand you like)

1/3 cup + 1 Tbsp. of blackberry pie filling (I used Musselman’s but it doesn’t matter)

1 cup of granola (I like Creative Snacks Co. Bountiful Berry Granola)

 

WHAT TO DO:

  1. In a small bowl combine the greek yogurt, stevia, and powdered peanut butter. Mix until fully incorporated and all powder is dissolved.

2. Gently stir in 1 Tbsp. of the blackberry pie filling, just enough to get a light swirl in the yogurt.

3. Layer around 1 1/2 Tbsp. of the blackberry filling in the bottoms of two glasses, and start to layer with the yogurt. Repeat this process using all of the yogurt and pie filling.

4. Divide the granola between the two glasses, sprinkling it over the tops of the yogurt.

5. Find a buddy & dig in!
